Experience the explosion of flavors in these homemade steak burritos, featuring juicy marinated steak, cilantro lime rice, and fresh toppings wrapped in warm tortillas.

  • 1 pound of strip steak (sliced)
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of pepper
  • 1 clove of garlic (minced)
  • 1 tablespoon of lime juice
  • 1/2 teaspoon of cumin
  • 1 tablespoon of soy sauce
  • 1 tablespoon of olive oil
  • 1 cup of cooked cilantro lime rice
  • 1/2 cup of guacamole
  • 1/2 cup of pico de gallo
  • 1/2 cup of shredded cheddar cheese
  • 4 flour tortillas (8-inch)
  • Fresh jalapeños or bell peppers (sliced)
  • Fresh cilantro or green onions (chopped)
  • Chipotle mayo (or lime crema)
  • Nonstick cooking spray

Instructions

  1. Start by preparing your marinade. In a bowl, mix together salt, pepper, minced garlic, lime juice, cumin, and soy sauce.
  2. Toss the steak pieces into the bowl, ensuring each piece gets evenly coated. Let the beef marinate for at least 30 minutes.
  3. After marinating, pat the steak pieces dry. Heat a skillet or griddle over medium-high heat and cook the steak for about 5 minutes or until it reaches your preferred doneness.
  4. While steak is cooking, warm each tortilla in a separate skillet for about half a minute until pliable.
  5. Assemble the burritos by laying the warm tortillas flat. Add a helping of cilantro lime rice, followed by the cooked steak, guacamole, pico de gallo, and shredded cheddar cheese.
  6. For an added kick, top each burrito with fresh bell peppers or sliced jalapeños. Drizzle with chipotle mayo, being cautious not to overfill.
  7. Roll each burrito snugly. Spray the outside with nonstick spray and place them seam-side down in your hot skillet or griddle.
  8. Cook each burrito for about a minute until the grilled side crisps. Flip and cook the other side until golden brown.

Notes

Letting cooked steak rest for a few minutes allows juices to redistribute. Experiment with toppings for personal preference.
