A simple yet delicious Parmesan chicken recipe with a crispy exterior and juicy interior, perfect for weeknight dinners.

  • 34 boneless skinless chicken breasts
  • 1 cup freshly grated Parmesan cheese
  • 1 cup seasoned breadcrumbs
  • 2 large eggs
  • 1 teaspoon garlic powder
  • Fresh parsley (for garnish)
  • Olive oil
  • Salt
  • Pepper

Instructions

  1. Preheat the oven to 400°F (200°C) and lightly grease a baking dish with olive oil.
  2. In a bowl, whisk the eggs until frothy.
  3. In another bowl, mix together the breadcrumbs, garlic powder, salt, pepper, and half of the Parmesan cheese.
  4. Dip each chicken breast into the egg mixture, allowing any excess to drip off, then coat it in the breadcrumb mixture while pressing firmly to ensure adherence.
  5. Arrange the coated chicken breasts in the greased baking dish, and drizzle lightly with olive oil.
  6. Bake for approximately 25-30 minutes or until the chicken turns golden brown and crispy. Sprinkle the remaining Parmesan over the chicken during the last five minutes of baking.
  7. Let the chicken rest briefly before serving hot with your favorite sides.
