A delightful slow-cooked chicken dish featuring sweet pineapple and savory elements that transports you to a tropical paradise.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup pineapple chunks (fresh or canned)
  • 1/2 cup soy sauce
  • 1/2 cup brown sugar
  • 1/4 cup ketchup
  • 1 tablespoon minced garlic
  • 1 tablespoon grated ginger
  • 1 red bell pepper, sliced
  • 1 onion, sliced
  • Salt and pepper to taste

Instructions

  1. Place chicken breasts in the crockpot.
  2. In a bowl, mix together pineapple, soy sauce, brown sugar, ketchup, garlic, and ginger.
  3. Pour the mixture over the chicken in the crockpot.
  4. Add sliced bell pepper and onion on top.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  6. Once cooked, shred the chicken and stir it back into the sauce before serving.
  7. Serve over rice or with a side of vegetables.

Notes

For thicker sauce, uncover the crockpot for the last 30 minutes of cooking. Feel free to customize with different vegetables or add a spicy kick with sriracha or red pepper flakes.
