A simple and flavorful dish featuring juicy chicken breasts cooked in a Crockpot with Mediterranean ingredients like olives, feta, and fresh tomatoes.

  • 4 boneless, skinless chicken breasts
  • 1 cup chicken broth
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 2 garlic cloves, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cherry tomatoes, halved
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup kalamata olives, pitted and halved
  • Fresh parsley for garnish

Instructions

  1. Place chicken breasts in the Crockpot.
  2. In a bowl, mix chicken broth, olive oil, lemon juice, garlic, oregano, salt, and pepper. Pour the mixture over the chicken.
  3. Add cherry tomatoes, feta cheese, and olives on top.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is cooked through and tender.
  5. Serve garnished with fresh parsley.

Notes

For added flavor, marinate the chicken in olive oil, garlic, and lemon juice the night before. Adjust seasoning to taste, and consider adding fresh herbs before serving.
