A delightful combination of tropical flavors, this Crockpot Coconut Lime Chicken transforms humble chicken into a succulent main course with rich coconut and zesty lime.

Ingredients

  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1 (14 oz) can coconut milk (full fat or light)
  • Zest and juice of 2 limes
  • 3 cloves garlic, minced
  • 1 tbsp honey
  • 1 tsp ground cumin
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup chopped fresh cilantro (plus more for garnish)

Instructions

  1. Place the chicken in the crockpot.
  2. Whisk together coconut milk, lime zest and juice, garlic, honey, cumin, salt, and pepper in a bowl.
  3. Pour the mixture over the chicken.
  4. Cover and cook on LOW for 300-360 minutes or HIGH for 150-180 minutes.
  5. Stir in cilantro before serving. Serve over rice and garnish with extra cilantro.

Notes

For enhanced flavor, marinate the chicken in the coconut milk mixture for a few hours or overnight. Add sliced jalapeños for a spicy kick.
