A comforting Chicken Tortellini dish that simmers effortlessly in a CrockPot, blending tender chicken, delightful tortellini, and vibrant spinach in a flavorful marinara sauce.

  • 1 ½ lbs chicken breast (about 4 medium breasts)
  • 2 cups marinara sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion granules
  • 1 teaspoon Italian seasoning mix
  • ½ teaspoon paprika
  • ¼ teaspoon red chili flakes
  • 1 ½ cups chicken broth
  • 1 lb cheese tortellini
  • 1 cup mozzarella cheese, shredded
  • ½ cup heavy cream
  • 2 cups baby spinach
  • ⅓ cup Parmesan cheese, grated

Instructions

  1. Spray the slow cooker with olive oil to prevent stickiness.
  2. Arrange the chicken breasts in a single layer inside the cooker.
  3. Pour marinara sauce over the chicken, followed by garlic powder, onion granules, Italian seasoning, paprika, and red chili flakes.
  4. Add chicken broth to the mixture.
  5. Cover and set the slow cooker to LOW for about 240 minutes.
  6. Once cooking is complete, shred the cooked chicken using forks while mixing it with the sauce.
  7. Return the shredded chicken back to the cooker and mix well.
  8. Add cheese tortellini, mozzarella, and heavy cream, stirring until combined.
  9. Cook on LOW for an additional 30 minutes to allow the tortellini to cook through.
  10. Stir in fresh spinach and cook for another 10 minutes until wilted.
  11. Add grated Parmesan cheese, taste, and adjust seasoning if necessary.

Notes

Avoid opening the slow cooker during cooking to retain heat. Adjust spice levels as desired, and consider using different types of cheese for variety.
