A rich and creamy Crockpot Butter Chicken that makes a cozy, comforting meal with minimal effort. Perfectly tender chicken thighs are infused with aromatic spices for a delicious, restaurant-quality dish.

Ingredients

  • 1.5 lbs chicken thighs
  • 1 cup skyr (or Greek yogurt)
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 can (14 oz) diced tomatoes
  • 2 tbsp butter
  • 2 tbsp garam masala
  • 1 tsp turmeric
  • 1 tsp cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large bowl, combine the skyr, garlic, ginger, garam masala, turmeric, cumin, salt, and pepper. Mix until consistent.
  2. Add the chicken thighs to the bowl. Coat each piece well with the yogurt mixture.
  3. In your slow cooker, place the chopped onion at the bottom.
  4. Layer the marinated chicken thighs on top of the onion.
  5. Pour the can of diced tomatoes over the chicken.
  6. Top the dish with butter.
  7. Cover and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is tender.
  8. Once cooked, shred the chicken in the sauce and stir well.
  9. Serve hot, garnished with fresh cilantro.

Notes

For added richness, you can experiment with variations by adding vegetables like bell peppers or spinach.
