Ingredients

Scale
  • 4 pounds chicken wings
  • 2 tablespoons baking powder (aluminum-free)
  • 3/4 teaspoon salt
  • 1/2 teaspoon cracked black pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Instructions

  1. Pat the wings dry completely with paper towels.
  2. In a small bowl, combine salt, pepper, garlic powder, smoked paprika, and baking powder.
  3. Sprinkle the seasoning mixture over the wings and toss until evenly coated.
  4. Place the seasoned wings in the refrigerator for 30 minutes to 4 hours to enhance the flavors.
  5. Preheat the oven to 425°F (220°C) with the oven rack positioned in the middle-upper section.
  6. Line a baking sheet with aluminum foil and set a wire rack inside. Spray the rack with non-stick cooking spray for easy cleanup.
  7. Arrange the wings in a single layer on the rack, skin side up.
  8. Bake for one hour, turning the wings every 20 minutes for even crispiness.
  9. Ensure the wings reach an internal temperature of 180°F when checked in the thickest part, avoiding the bone.
  10. Remove from the oven and let them rest for 5 minutes. If desired, toss with your favorite wing sauce before serving.

Notes

For extra crispiness, make sure to dry the wings thoroughly and space them out on the rack during baking.
