  • 2 (5-6 ounce) boneless, skinless chicken breasts
  • 2 large eggs
  • 2 tablespoons milk (non-dairy options work as well)
  • 1 cup breadcrumbs (gluten-free if preferred)
  • 1/4 cup shredded parmesan cheese
  • 1 tablespoon Italian seasoning
  • 2 teaspoons garlic powder
  • 1 teaspoon chili powder
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • Olive oil cooking spray

Instructions

  1. Preheat your oven to 400 degrees F and line a baking sheet with parchment paper.
  2. Slice each chicken breast in half lengthwise. Place them between plastic wrap and pound into 1/4 inch thick cutlets.
  3. In a medium shallow dish, crack the eggs and whisk together with milk, adding a pinch of salt and pepper.
  4. In a separate shallow dish, combine breadcrumbs, parmesan cheese, Italian seasoning, garlic powder, chili powder, salt, and pepper.
  5. Dip each chicken cutlet into the egg mixture, then into the breadcrumb mixture, pressing the breading into the chicken.
  6. Place the coated chicken onto the baking sheet in a single layer, ensuring none overlap.
  7. Spray each chicken cutlet with olive oil cooking spray for added crispiness.
  8. Bake for 17-20 minutes, flipping the cutlets halfway through until they reach an internal temperature of 165 degrees F.

Notes

For ultimate crispiness, spray more olive oil before returning to the oven if needed. Broil for the last couple of minutes for extra crunch.
