Ingredients

Scale
  • ½ cup full-fat mayonnaise
  • 3 tbsp Greek yogurt
  • 1 tsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 2 tbsp lemon juice
  • ¼ cup Parmesan cheese (freshly grated)
  • 12 garlic cloves (minced)
  • ¼ tsp black pepper
  • Pinch sea salt
  • 5 chicken cutlets
  • Sea salt (to taste)
  • Ground black pepper (to taste)
  • Oil (for frying)
  • â…“ cup all-purpose flour
  • ½ tsp salt
  • ¾ tsp smoked paprika
  • 2 eggs
  • ¼ tsp salt
  • ¾ cup panko breadcrumbs
  • ¼ cup breadcrumbs
  • 1 tsp dried parsley
  • ½ tsp ground black pepper
  • ½ tsp sea salt
  • ½ tsp dried oregano
  • 1 tsp garlic powder
  • ¼ cup Parmesan cheese (freshly grated)
  • 2 romaine hearts (chopped)
  • 12 French baguettes
  • Extra Parmesan cheese (freshly grated)

Instructions

  1. In a bowl, mix the mayonnaise, Greek yogurt, Dijon mustard, Worcestershire sauce, lemon juice, Parmesan cheese, minced garlic, black pepper, and sea salt to prepare the Caesar dressing. Reserve about 4-5 tablespoons of the dressing and combine it with the chopped romaine lettuce in a medium bowl. Cover and refrigerate separately.
  2. Pound the chicken cutlets gently to even their thickness and season with salt and ground black pepper.
  3. Set up the breading station with flour, salt, and smoked paprika in one dish, beaten eggs in the second, and a mixture of panko, breadcrumbs, dried parsley, black pepper, sea salt, dried oregano, garlic powder, and grated Parmesan cheese in the third.
  4. Heat oil in a frying pan over medium heat. Dredge each chicken cutlet in the flour mixture, then dip it into the egg, and finally press it into the breadcrumb mixture.
  5. Fry the chicken until golden brown and crispy, about 4-5 minutes per side. Drain on a wire rack.
  6. Slice the baguettes, spread the reserved dressing inside, add a crispy chicken cutlet, and top with the Caesar salad. Add extra Parmesan cheese, close the sandwiches, and serve immediately.

Notes

Ensure your ingredients are at room temperature for even cooking. For extra crispiness, consider double-breading the chicken.
