Ingredients

Scale
  • 2 chicken breasts (sliced in half, horizontally)
  • 1 cup flour
  • 1 cup breadcrumbs
  • ¼ cup Parmesan (grated)
  • 2 eggs
  • 1 tbsp milk
  • Oil (for frying)
  • 4 buns
  • ½ head romaine lettuce
  • ¼ cup mayonnaise or Greek yogurt
  • 1 tsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 1 garlic clove (grated)
  • 1 tbsp lemon juice or apple cider vinegar
  • 2 tbsp Parmesan (grated)
  • Salt & pepper (to taste)

Instructions

  1. Make the Caesar dressing: Combine mayonnaise or Greek yogurt, Dijon mustard, Worcestershire sauce, grated garlic, lemon juice or apple cider vinegar, and grated Parmesan in a bowl. Mix well and store in the refrigerator until ready to use.
  2. Prepare the chicken: Slice the chicken breasts into thin cutlets and pat dry.
  3. Set up your breading station: Arrange flour (mixed with salt), beaten eggs (with milk), and breadcrumbs (mixed with Parmesan) in three bowls.
  4. Dredge the chicken: Coat each cutlet in flour, dip in the egg mixture, and coat with breadcrumbs. Place on a cooling rack.
  5. Heat oil: In a pan over medium heat, heat your oil until it reaches about 350 degrees.
  6. Fry the chicken: Cook the chicken cutlets for about 2 minutes on each side until golden brown. Season with salt after cooking.
  7. Combine lettuce and dressing: Toss romaine lettuce with Caesar dressing.
  8. Assemble the sandwiches: Optionally toast the buns. Layer each bun with crispy chicken and Caesar salad mix.
  9. Serve and enjoy with extra dressing if desired.

Notes

For an extra punch, consider adding fresh herbs like parsley or basil to the salad. Store leftovers separately to maintain freshness.
