  • 1/3 cup all-purpose flour
  • 2 eggs
  • 3/4 cup panko crumbs
  • 1/4 cup breadcrumbs
  • 1 teaspoon dried parsley
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1/4 cup freshly grated Parmesan cheese
  • 2 romaine hearts, chopped
  • 12 French baguettes
  • 1/2 cup full-fat mayonnaise
  • 3 tablespoons Greek yogurt
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 2 tablespoons lemon juice
  • 1/4 cup freshly grated Parmesan cheese
  • 12 garlic cloves, minced
  • 1/4 teaspoon black pepper
  • Pinch of sea salt

Instructions

  1. Mix the Caesar dressing by combining mayonnaise, Greek yogurt, Dijon mustard, Worcestershire sauce, lemon juice, and 1/4 cup Parmesan in a bowl. Add garlic, black pepper, and sea salt; stir until smooth.
  2. Season chicken cutlets with sea salt and black pepper.
  3. Prepare the breading station: one bowl with flour, another with beaten eggs, and a third with combined panko crumbs, breadcrumbs, parsley, oregano, garlic powder, and salt/pepper.
  4. Dip chicken cutlets in flour, then egg, and finally into breadcrumb mixture, ensuring thorough coating.
  5. Heat oil in a frying pan over medium heat. Fry chicken cutlets until golden brown, about 4-5 minutes per side. Transfer to a paper towel-lined plate.
  6. Slice French baguette lengthwise, spread reserved Caesar dressing inside, layer with chicken cutlets, chopped romaine, and sprinkle more Parmesan.
  7. Serve immediately for best texture and flavor.
