Delightful creamy white sauce chicken enchiladas packed with tender chicken, rich white sauce, and melted cheese, perfect for a comforting dinner.

  • 2 cups cooked shredded chicken
  • 8 flour tortillas
  • 2 cups white sauce (like Alfredo sauce)
  • 1 cup shredded cheese (like Monterey Jack or cheddar)
  • 1 can diced green chilies
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. In a large bowl, mix the shredded chicken, diced green chilies, garlic powder, onion powder, salt, and pepper until well combined.
  2. Spoon some of the chicken mixture into each flour tortilla, rolling them up tightly.
  3. Place the rolled tortillas seam-side down in a greased baking dish.
  4. Pour the white sauce evenly over the enchiladas.
  5. Sprinkle the shredded cheese on top generously.
  6. Bake in the preheated oven at 350°F (175°C) for 20-25 minutes, or until the cheese is bubbly and golden.
  7. Garnish with fresh cilantro if desired and serve hot.

Notes

For added flavor, sauté the filling briefly before rolling the tortillas. Consider using rotisserie chicken for convenience.
