A creamy Tuscan garlic chicken skillet featuring succulent chicken breasts, a luscious garlic cream sauce enriched by sun-dried tomatoes and fresh spinach.

Ingredients

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1 cup heavy cream
  • 1/2 cup sun-dried tomatoes, packed in oil, chopped
  • 2 cups fresh spinach
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup low-sodium chicken broth
  • 2 tsp Italian seasoning
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season chicken with salt and pepper. Cook for 6-7 minutes on each side until golden brown and cooked through. Remove from skillet.
  3. In the same skillet, add minced garlic and sun-dried tomatoes. Sauté for 1-2 minutes until fragrant.
  4. Pour in heavy cream and chicken broth while scraping up browned bits from the pan. Stir continuously for 2-3 minutes until thickened.
  5. Stir in fresh spinach and grated Parmesan cheese until melted and creamy.
  6. Return the seared chicken to the skillet, spooning sauce over each piece. Simmer for another 5 minutes.

Notes

Serve the chicken atop pasta or polenta, and garnish with grated Parmesan or fresh basil.
