A luxurious pasta dish featuring chicken, spinach, and sun-dried tomatoes in a creamy sauce, perfect for weeknight dinners or special occasions.

  • 12 oz pasta (penne or fettuccine)
  • 2 tbsp olive oil
  • 1 lb chicken breast (cut into bite-sized pieces)
  • Salt and black pepper (to taste)
  • 3 cloves garlic (minced)
  • ½ cup sun-dried tomatoes (chopped)
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • Pinch of red pepper flakes (optional)

Instructions

  1. Cook the pasta according to package directions, reserving ½ cup of the pasta water before draining.
  2. Heat olive oil in a large skillet over medium heat. Season the chicken with salt and pepper, cooking until golden brown and cooked through. Remove the chicken and set it aside.
  3. In the same skillet, add the minced garlic and chopped sun-dried tomatoes, cooking for about 1–2 minutes until fragrant.
  4. Stir in the heavy cream and chicken broth, bringing it to a gentle simmer.
  5. Add the grated Parmesan cheese, Italian seasoning, and red pepper flakes (if using). Stir until creamy and smooth.
  6. Toss in the fresh spinach and let it wilt into the sauce.
  7. Return the cooked chicken to the pan, stirring to coat with the sauce.
  8. Toss in the cooked pasta, adding a splash of reserved pasta water if needed to loosen the sauce.
  9. Serve warm, topping with extra Parmesan if desired.

For added flavor, consider including fresh herbs such as basil or thyme, and adjust seasoning to taste throughout the cooking process.
