A delightful blend of garlic, rich cream, and tangy tomatoes over perfectly cooked pasta, perfect for cozy weeknight dinners or special occasions.

  • 8 ounces pasta (fettuccine or penne)
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 can (14 ounces) diced tomatoes
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/4 cup grated Parmesan cheese
  • Fresh basil for garnish

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. Heat the olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.
  3. Add the diced tomatoes (with juices) to the skillet, stirring to combine. Cook for 5 minutes.
  4. Reduce the heat and stir in the heavy cream, salt, pepper, basil, and oregano. Simmer for 3-5 minutes until the sauce thickens slightly.
  5. Add the cooked pasta to the sauce, tossing to coat evenly.
  6. Stir in the Parmesan cheese until melted and creamy.
  7. Serve hot, garnished with fresh basil.

Notes

For an added depth of flavor, consider using fire-roasted diced tomatoes. Experiment with herbs to enhance the dish further.
