A comforting and quick meal featuring rotisserie chicken, pasta, and a creamy sauce.

Ingredients

  • 2 cups shredded rotisserie chicken
  • 8 oz pasta (penne or fettuccine)
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 2 cups fresh spinach
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Sauté the minced garlic for about one minute until fragrant.
  4. Add heavy cream and chicken broth to the skillet; stir well and let simmer for about five minutes until slightly thickened.
  5. Stir in the shredded chicken and fresh spinach; cook until the spinach wilts, about two minutes.
  6. Combine the cooked pasta with the sauce, tossing until evenly coated.
  7. Season with salt and pepper as needed.
  8. Serve warm, garnished with freshly grated Parmesan cheese.

Notes

Add reserved pasta cooking water if the sauce is too thick. Feel free to include additional vegetables or use alternative proteins.
