A cozy dish featuring tender rotisserie chicken, creamy sauce, and pasta, perfect for weeknight dinners or gatherings.

  • 2 cups shredded rotisserie chicken
  • 8 oz pasta (penne or fettuccine)
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 2 cups fresh spinach
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Cook pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat.
  3. Sauté minced garlic for about one minute until fragrant.
  4. Add heavy cream and chicken broth to the skillet; stir well and let simmer for about five minutes until slightly thickened.
  5. Stir in shredded chicken and fresh spinach; cook until spinach wilts, about two minutes.
  6. Combine cooked pasta with the sauce, tossing until evenly coated.
  7. Season with salt and pepper as needed.
  8. Serve warm, garnished with freshly grated Parmesan cheese.

For added flavor, reserve some pasta water to adjust sauce consistency. Freshly grated Parmesan cheese enhances taste significantly.
