A comforting one-pot meal that combines tender chicken, creamy broth, and aromatic rice, perfect for weeknight dinners.

  • 1.5 pounds chicken breasts, diced
  • 4 tablespoons butter
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 teaspoons Italian seasoning
  • Salt and pepper, to taste
  • 2.5 cups chicken broth
  • 1 cup long grain white rice
  • 1/2 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese

Instructions

  1. Heat the butter in a large skillet over medium-high heat. Add the diced onion and cook until softened.
  2. Introduce the diced chicken, Italian seasoning, salt, and pepper to the skillet. Sauté until the chicken turns golden brown.
  3. Stir in the minced garlic, cooking briefly to prevent burning.
  4. Pour in the chicken broth and stir in the rice, bringing the mixture to a boil.
  5. Reduce heat to a simmer, cover, and allow it to simmer for 17-20 minutes, or until the rice is tender.
  6. Stir in the heavy cream and grated Parmesan cheese until well combined. Serve immediately, garnished with parsley if desired.
