A comforting dish of chicken breasts and orzo pasta, creamy Parmesan cheese, and vibrant spinach, perfect for weeknight dinners.

  • 2 chicken breasts
  • 1 cup orzo pasta
  • ½ cup Parmesan cheese, grated
  • 2 cups fresh spinach
  • ½ cup sun-dried tomatoes, chopped
  • 1 lemon, juiced
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 3 cups chicken broth
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. In a large pan, heat olive oil over medium heat.
  2. Season the chicken breasts with salt and pepper, then add them to the pan. Cook until browned and cooked through, about 5-7 minutes per side.
  3. Remove the chicken and set aside.
  4. In the same pan, add minced garlic and cook for 1 minute until fragrant.
  5. Stir in the orzo, sun-dried tomatoes, and chicken broth. Bring to a boil, then reduce heat to low and simmer until orzo is cooked, about 10-12 minutes.
  6. Add the chicken back to the pan along with fresh spinach, lemon juice, and Parmesan cheese. Stir until spinach is wilted and everything is combined.
  7. Serve warm and enjoy your comforting dish.

Notes

For a richer sauce, consider stirring in more cream or Parmesan at the end. Leftovers can be stored in airtight containers for up to three days.
