A delightful creamy Italian chicken pasta dish featuring tender chicken, a rich creamy sauce, and perfectly cooked pasta, perfect for weeknight dinners.

Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons of olive oil
  • 2 tablespoons of butter
  • 3 cloves of garlic (minced)
  • 1 cup of heavy cream
  • 1 cup of grated Parmesan cheese
  • 1 teaspoon of Italian seasoning
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1/4 teaspoon of crushed red pepper flakes (optional)
  • 8 ounces of fettuccine or linguine pasta
  • 2 tablespoons of chopped fresh parsley or basil

Instructions

  1. Season the chicken breasts on both sides with salt, pepper, and Italian seasoning.
  2. Heat olive oil in a skillet over medium-high heat and sear the chicken until golden brown and cooked through, about 6-7 minutes per side. Remove and slice.
  3. Cook the pasta in boiling water according to package instructions until al dente. Reserve 1/2 cup of pasta water and drain.
  4. In the same skillet, melt butter and sauté the minced garlic until fragrant.
  5. Pour in heavy cream and let it simmer for 2-3 minutes.
  6. Whisk in grated Parmesan until the sauce thickens.
  7. Add the drained pasta to the sauce and mix well. Use the reserved pasta water to adjust the consistency as needed.
  8. Return the sliced chicken to the skillet, mix everything, and let it simmer together for another 2-3 minutes.
  9. Garnish with chopped parsley or basil and serve hot.

Notes

Opt for freshly grated Parmesan cheese for the best flavor. Experiment with crushed red pepper flakes for added heat, if desired.
