Creamy Chicken Schnitzel

Deliciously crispy chicken schnitzel served with a rich creamy sauce, perfect for any occasion.

Ingredients

  • 2 chicken breasts
  • 1 tsp salt flakes
  • 1/4 tsp pepper
  • 1 tsp sweet paprika
  • 1 tsp onion powder
  • 1 tsp dried thyme
  • 1/4 cup plain/all-purpose flour
  • 1 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 tbsp freshly minced garlic
  • 1/2 cup chicken stock
  • 300 ml thickened/heavy cream
  • 1 tsp Dijon mustard
  • 1/2 cup Parmesan cheese
  • Salt and pepper, to taste
  • Mashed potatoes or steamed rice/pasta, for serving
  • Steamed greens, for serving
  • 1 tbsp finely chopped parsley, for garnish
  • Lemon wedges, for serving

Instructions

  1. Season the chicken breasts with salt, pepper, sweet paprika, onion powder, and dried thyme.
  2. Dredge each chicken breast in flour, shaking off the excess.
  3. Heat olive oil and 1 tablespoon of butter in a skillet over medium-high heat.
  4. Cook the schnitzels for 3-4 minutes on each side until golden brown.
  5. Remove schnitzels from the skillet and set aside.
  6. In the same skillet, melt the remaining tablespoon of butter and sauté minced garlic until fragrant.
  7. Pour in chicken stock, thickened cream, Dijon mustard, and Parmesan cheese, stirring to combine.
  8. Return the schnitzels to the skillet and coat with the sauce for a few minutes.
  9. Serve over mashed potatoes or pasta, garnished with parsley and lemon wedges.

Notes

For extra crunch, consider adding breadcrumbs to the dredging process. Use a meat mallet to flatten chicken for even cooking.
