A comforting and creamy one-pot dish that combines the flavors of classic chicken pot pie with orzo pasta, perfect for busy weeknights or family gatherings.

Ingredients

  • 2 cups orzo pasta
  • 1 lb boneless, skinless chicken breasts, diced
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onions and minced garlic, sauté until soft.
  3. Add the diced chicken and cook until no longer pink.
  4. Stir in the frozen vegetables, thyme, salt, and pepper, cooking for another 2-3 minutes.
  5. Add the orzo and chicken broth, bringing everything to a boil.
  6. Reduce the heat and simmer for 10-12 minutes, or until the orzo is tender.
  7. Stir in the heavy cream and heat through.
  8. Serve warm and garnish with fresh parsley, if desired.

Notes

For a thicker consistency, lessen the amount of broth slightly or allow it to simmer longer. If the dish appears too thick, stir in a bit more chicken broth.
