  • 1 pound boneless, skinless chicken breast
  • 8 ounces penne pasta
  • 1 cup sun-dried tomatoes
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions

  1. Preheat the oven to 375°F (190°C). Season the chicken breast with salt and pepper on both sides.
  2. Heat olive oil in a large oven-safe skillet over medium-high heat. Cook the chicken until golden brown on both sides, approximately 3-4 minutes each side. Remove from the skillet and set aside.
  3. In the same skillet, sauté minced garlic for 1-2 minutes until fragrant. Add sun-dried tomatoes and cook for an additional 2-3 minutes.
  4. Stir in chicken broth and heavy cream, bringing the mixture to a simmer for 5 minutes. Mix in grated Parmesan cheese until melted and well combined.
  5. Cook the penne pasta according to package instructions until al dente.
  6. Slice the cooked chicken and return it to the skillet with the creamy sauce. Mix in the pasta until well coated in sauce.
  7. Transfer the skillet to the oven and bake for 15-20 minutes until bubbly. Garnish with fresh basil before serving.
