Ingredients

  • 1 lb chicken breast, diced
  • 8 oz mushrooms, sliced
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese, grated
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Cooked rice, mashed potatoes, or pasta for serving

Instructions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the minced garlic and diced chicken to the skillet, cooking until the chicken is browned and cooked through.
  3. Stir in the sliced mushrooms and cook until they are tender, approximately 5-7 minutes.
  4. Toss in the fresh spinach and cook until wilted.
  5. Pour in the heavy cream and stir in the grated Parmesan cheese, cooking until the sauce thickens, around 3-5 minutes.
  6. Season with salt and pepper to taste.
  7. Serve over rice, mashed potatoes, or pasta.
