A comforting blend of chicken, spinach, and creamy cheeses topped with a golden crust, perfect for weeknight dinners.

  • 23 cups cooked and shredded chicken
  • 4 cups fresh spinach (or 1 package frozen spinach, thawed and drained)
  • 8 ounces cream cheese, softened
  • 1/2 cup sour cream
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Pinch of nutmeg (optional)
  • Optional additions: sliced mushrooms, artichoke hearts, or cooked pasta

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Blend the softened cream cheese and sour cream until smooth.
  3. Add the minced garlic, finely chopped onion, salt, black pepper, and optional nutmeg. Stir until well combined.
  4. Layer the cooked and shredded chicken and sautéed spinach in a greased casserole dish.
  5. Pour the creamy sauce over the top, gently mixing to combine.
  6. Sprinkle the shredded mozzarella and grated Parmesan evenly over the top.
  7. Bake uncovered for 25-30 minutes, or until the top is golden and bubbly.
  8. Let cool slightly before serving.
