A simple yet flavorful creamy Cajun chicken dish perfect for weeknight dinners, served beautifully over rice or pasta.

  • 3 chicken breasts (about 650g)
  • 1â…“ tablespoon cajun seasoning
  • 1 cup half-and-half cream
  • â…“ cup chicken broth
  • 40 g unsalted butter
  • â…“ cup finely chopped onion
  • 3 large garlic cloves, minced
  • 3 tablespoons all-purpose flour
  • Salt and pepper, to taste

Instructions

  1. Cut the chicken breasts lengthwise into cutlets and pat them dry with a kitchen paper towel.
  2. Season both sides of the chicken cutlets with salt, black pepper, and cajun seasoning, reserving about 1 teaspoon for later.
  3. In a separate bowl, combine flour and a pinch of cajun seasoning.
  4. Coat each seasoned cutlet in the flour mixture, shaking off excess flour.
  5. Heat a skillet over medium-high heat and add the butter.
  6. Once melted and hot, add the floured chicken cutlets to the skillet and cook for 3 minutes on each side or until golden brown. Remove the cooked chicken from the pan and set aside.
  7. Add chopped onions and minced garlic to the hot pan, sautéing for about 1-2 minutes while stirring continuously to prevent burning.
  8. Carefully pour in the chicken broth and stir, deglazing the bottom of the pan.
  9. Add the cream and the remaining cajun seasoning, stirring to combine.
  10. Reduce heat and allow it to simmer for 1 minute. Taste and adjust seasoning as needed.
  11. Return the cooked chicken to the creamy sauce and simmer for an additional 3-5 minutes, or until the chicken is cooked through. Spoon sauce over the chicken if desired.

Notes

For a thicker sauce, allow it to simmer longer or add more flour. Adjust seasoning throughout the cooking process to suit your preferences.
