A rich and spiced creamy dish featuring juicy chicken cutlets, perfect for busy weeknights.

  • 3 chicken breasts (about 650g)
  • 1â…“ tablespoons Cajun seasoning
  • 1 cup single cream (half and half cream)
  • â…“ cup chicken broth or stock
  • 40g unsalted butter
  • â…“ cup onion, finely chopped
  • 3 large garlic cloves, minced
  • 3 tablespoons all-purpose flour
  • Salt and pepper to taste

Instructions

  1. Cut the chicken breasts lengthwise into cutlets and pat them dry with a kitchen towel.
  2. Season the chicken cutlets on both sides with salt, black pepper, and Cajun seasoning, reserving about 1 teaspoon for later.
  3. In a separate bowl, combine the flour and a pinch of Cajun seasoning, mixing well.
  4. Coat each cutlet in the seasoned flour, shaking off any excess.
  5. Heat a skillet over medium-high heat and melt the butter until hot.
  6. Carefully add the floured chicken to the skillet, cooking each side for about 3 minutes until golden. Remove the chicken and set it aside.
  7. Add the chopped onions and minced garlic to the pan, sautéing for 1-2 minutes while stirring continuously.
  8. Carefully add the chicken broth and stir, deglazing the bottom of the pan.
  9. Pour the cream into the pan, adding the remaining Cajun seasoning, and combine. Reduce heat and simmer for 1 minute, adjusting seasoning as needed.
  10. Return the chicken to the creamy sauce, simmering for an additional 3-5 minutes until cooked through. Spoon sauce over chicken if desired.

Notes

For extra flavor, consider using homemade chicken stock instead of broth. Adjust seasoning to taste based on spice preference.
