A deliciously rich chicken dish featuring creamy cottage cheese and Parmesan, perfect for a weeknight dinner.

  • 1 lb chicken breast or chicken thighs, cubed
  • 1 cup cottage cheese
  • â…“ cup grated Parmesan cheese
  • 1 teaspoon paprika
  • ½ teaspoon black pepper
  • 1 tablespoon oil
  • Salt, to taste

Instructions

  1. Season the cubed chicken with salt, paprika, and black pepper. Pat the chicken dry before seasoning.
  2. Heat the oil in a large skillet over medium heat.
  3. Add the chicken in a single layer and cook until golden on the bottom.
  4. Flip the chicken pieces and cook until fully cooked and golden on all sides.
  5. Lower the heat to low before adding the sauce ingredients.
  6. Add the cottage cheese and stir gently as it warms.
  7. Sprinkle in the Parmesan cheese and stir until the sauce coats the chicken.
  8. Taste and adjust salt and pepper as needed.
  9. Let the chicken simmer for 2-3 minutes until the sauce thickens slightly.
  10. Remove from heat, let rest for one minute before serving.
