– 4 slices beef bacon or turkey bacon, diced
– 8 eggs, whisked
– 1 cup cottage cheese (240 g)
– 1 cup cheddar cheese, shredded (120 g)
– 1 tbsp cornstarch (8 g)
– 1/4 tsp (1 ml) salt
Instructions
Set your oven to 300°F and bring water to a boil in a kettle.
In the meantime, place a skillet on medium-high heat, coat it with cooking spray, and cook the bacon pieces for 4-5 minutes. Lay them on a plate lined with paper towels to drain and set aside.
Combine cottage cheese, cheddar cheese, cornstarch, and salt in a blender and blend on high speed until smooth and well mixed. Add the whisked eggs and blend briefly until just incorporated.
Spray a 12-cup metal muffin pan with cooking spray, then place it on a 9×13 baking dish. Evenly distribute the cooked bacon bits into the muffin cups, followed by the egg mixture.
Carefully place the baking dish with the muffin pan into the oven, then gently pour the hot water into the baking dish until the bottom of the muffin cups is submerged.
Cook for 30 minutes until the egg bites are just set. First, take the muffin pan out, then cautiously remove the baking dish with the water. Allow the egg bites to cool before removing them from the muffin cups. Serve and enjoy!
