A comforting and hearty bake combining tender chicken, savory onion soup, and fluffy rice topped with melted cheese and crispy fried onions.

  • 3 cups cooked white rice (brown rice optional)
  • 2 cups shredded cooked chicken (or rotisserie chicken)
  • 1 can cream of chicken soup
  • 1 can French onion soup
  • 1 cup sour cream
  • 1 cup shredded cheese (Mozzarella or Swiss)
  • 1 cup French fried onions
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and black pepper to taste
  • 1/4 cup chopped parsley (for garnish)

Instructions

  1. Preheat the oven to 350°F.
  2. In a large mixing bowl, combine the cooked rice, shredded chicken, cream of chicken soup, French onion soup, sour cream, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
  3. Transfer the mixture into a greased 9×13-inch baking dish, pressing it down gently.
  4. Sprinkle the shredded cheese and half of the French fried onions over the top.
  5. Bake in the oven for 30 minutes until bubbly and the cheese has melted.
  6. After 30 minutes, remove from the oven and sprinkle the remaining French fried onions on top; return to the oven for an additional 5 minutes or until golden brown.
  7. Garnish with chopped parsley before serving.

Notes

For added flavor, consider using homemade soups or adding vegetables like peas or bell peppers.
