A comforting dish featuring chicken breasts, creamy coconut milk, and fragrant jasmine rice, inspired by Southeast Asian street food.

  • 2 chicken breasts
  • 1 cup coconut milk
  • 1 cup jasmine rice
  • 2 cups chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until softened.
  3. Season the chicken breasts with salt and pepper, then add to the skillet.
  4. Cook until browned.
  5. Pour in coconut milk and chicken broth, bringing to a simmer.
  6. Add jasmine rice and stir well.
  7. Cover and reduce heat to low, cooking for about 18-20 minutes or until the rice is cooked through and liquid is absorbed.
  8. Fluff the rice with a fork, garnish with fresh cilantro, and serve hot.

Notes

Use fresh cilantro for garnish and allow the dish to rest after cooking to enhance flavors.
