  • 4 chicken thighs
  • 2 tablespoons chipotle powder
  • 2 tablespoons honey
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 2 pounds potatoes
  • 1/2 cup milk
  • 1/4 cup butter
  • 1 cup smoked gouda cheese, shredded

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Mix chipotle powder, honey, olive oil, salt, and pepper in a bowl. Coat the chicken thighs evenly in the mixture.
  3. Place the chicken thighs on a baking sheet and bake for 30-35 minutes or until cooked through.
  4. Peel and chop the potatoes, then boil them in salted water until tender.
  5. Drain the potatoes and mash them with milk and butter until smooth.
  6. Stir in the smoked gouda until it melts and becomes creamy.
  7. Serve the chicken thighs over the gouda mashed potatoes.
