  • 1/4 cup honey
  • 2 tablespoons chipotle sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 pound potatoes, peeled and cubed
  • 1/2 cup milk
  • 4 ounces smoked gouda cheese, shredded
  • 2 tablespoons butter

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Mix honey, chipotle sauce, garlic powder, paprika, salt, and pepper in a bowl.
  3. Coat the chicken thighs with the mixture, ensuring they are well covered.
  4. Place the coated chicken in a baking dish.
  5. Bake for 35-40 minutes or until cooked through and the skin is crispy.
  6. Boil potatoes in salted water until tender, about 15-20 minutes.
  7. Drain the potatoes and mash them with milk, smoked gouda, and butter until creamy.
  8. Serve the chicken thighs over the smoked gouda mashed potatoes.

Notes

Let the chicken marinate in the honey-chipotle mixture for at least 30 minutes for enhanced flavor.
