  • 4 large egg whites
  • 3/4 cup cornstarch (or substitute with Mochiko Sweet Rice Flour)
  • 1/3 cup water
  • 1/2 cup mayonnaise
  • 1/4 cup honey
  • Vegetable oil (for frying)
  • 2 tablespoons sweetened condensed milk

Instructions

  1. In a large bowl, whisk the egg whites until foamy, about 1-2 minutes.
  2. Whisk in the cornstarch and water until well combined.
  3. Gently fold in the chicken, ensuring it is thoroughly coated.
  4. Heat three inches of oil in a large pot over medium-high heat until it reaches 350°F.
  5. Fry the chicken pieces in two batches for about 2-3 minutes or until golden brown.
  6. In another bowl, mix together the mayonnaise, honey, and sweetened condensed milk until smooth.
  7. Just before serving, toss the freshly fried chicken in the sauce until evenly coated.

Notes

Serve immediately after tossing in the sauce to maintain crispiness. Keep fried chicken warm in a low-temperature oven if preparing ahead.
