A simple and delicious recipe for Chinese chicken fried rice that impresses with its savory flavors and colorful vegetables.

Ingredients

  • 2 cups cooked rice
  • 1 cup cooked chicken, diced
  • 2 eggs
  • 1/2 cup peas
  • 1/2 cup carrots, diced
  • 2 cloves garlic, minced
  • 1 shallot, chopped
  • 2 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large skillet over medium-high heat.
  2. Add the garlic and shallots, sauté until fragrant.
  3. Add the cooked chicken and cook until heated through.
  4. Push the mixture to the side of the pan and crack the eggs into the skillet, scrambling them until just set.
  5. Stir in the cooked rice, peas, and carrots.
  6. Add soy sauce, salt, and pepper; mix everything together.
  7. Cook for an additional 3-5 minutes until heated through.
  8. Serve hot.
