Chicken with Buttered Noodles

A comforting combination of tender chicken and rich garlic butter sauce served with egg noodles, perfect for any occasion.

Ingredients

  • 4 boneless, skinless chicken breasts (or thighs)
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme (optional)
  • 2 cups egg noodles (or your preferred pasta)
  • 4 tablespoons unsalted butter
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • 1 clove garlic, minced
  • 1/4 cup grated parmesan cheese (optional)
  • 1/2 cup chicken broth (or reserved pasta water)

Instructions

  1. Season the chicken generously with salt, pepper, garlic powder, onion powder, and dried thyme.
  2. In a skillet, heat olive oil over medium-high heat. Add the chicken and cook for 6-7 minutes on each side until cooked through.
  3. Transfer the cooked chicken to a plate and cover with foil to rest.
  4. Bring a large pot of salted water to a boil. Cook the egg noodles according to package instructions, about 7-9 minutes until al dente. Drain, reserving 1/2 cup of pasta water.
  5. In the same skillet, melt butter and add minced garlic. Sauté for 1-2 minutes.
  6. Add reserved pasta water or chicken broth to the skillet and stir to enhance flavor.
  7. Toss the cooked noodles with the butter sauce until well coated. Adjust seasoning with salt and pepper.
  8. Plate the noodles and top with sliced chicken. Garnish with chopped parsley.
  9. Serve warm with a side salad or crusty bread.

Notes

For added flavor, let the chicken marinate in the seasoning for at least 30 minutes before cooking.
