A vibrant dish featuring tender chicken coated in teriyaki sauce, served in delicious hollowed-out pineapples with fresh vegetables.

  • 2 cups cooked chicken, diced
  • 1 cup teriyaki sauce
  • 2 ripe pineapples, halved and hollowed out
  • 1 bell pepper, diced
  • 1 cup snap peas
  • 1 tablespoon olive oil
  • Green onions for garnish
  • Sesame seeds for garnish

Instructions

  1. In a pan, heat olive oil over medium heat.
  2. Add the diced chicken and cook until heated through.
  3. Pour in the teriyaki sauce and stir until the chicken is coated and heated.
  4. Add the bell pepper and snap peas, cooking for an additional 2-3 minutes until vegetables are tender yet crisp.
  5. Remove the mixture from heat.
  6. Serve the teriyaki chicken mixture in the hollowed-out pineapple halves.
  7. Garnish with green onions and sesame seeds.

Notes

For added flavor, consider marinating chicken in teriyaki sauce for an hour before cooking. Lightly toasting sesame seeds enhances their crunch.
