A flavorful and vibrant dish combining tender chicken, juicy pineapple, and crisp vegetables served over fluffy rice with a homemade teriyaki sauce.

  • 2 cups cooked rice
  • 1 pound boneless chicken thighs or breasts
  • 1 cup pineapple chunks
  • 1 bell pepper
  • 1 cup broccoli florets
  • 2 tablespoons vegetable oil
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 2 tablespoons rice vinegar
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 1 teaspoon minced ginger
  • 1 teaspoon minced garlic
  • 1 tablespoon sesame oil
  • 3 green onions (for garnish)
  • Sesame seeds (for garnish)

Instructions

  1. Prepare the teriyaki sauce by heating soy sauce, honey, rice vinegar, minced ginger, minced garlic, and sesame oil in a saucepan over medium heat.
  2. In a small bowl, mix cornstarch with water and add to the saucepan, stirring until the sauce thickens.
  3. In a skillet or wok, heat vegetable oil over medium-high heat, add chicken and cook until browned and fully cooked.
  4. Add bell pepper and broccoli, stir-frying until tender-crisp.
  5. Mix in pineapple chunks and pour the teriyaki sauce over everything, cooking for a few more minutes to blend flavors.
  6. Serve the Chicken Teriyaki Pineapple Bowls over cooked rice, garnishing with green onions and sesame seeds.

Notes

Marinate chicken in teriyaki sauce for extra flavor. Swap in other vegetables or proteins based on preference.
