A comforting blend of tender chicken, sweet potatoes, and spinach served over a hearty base of brown rice, perfect for any night of the week.

Ingredients

  • 1 cup cooked brown rice
  • 1 chicken breast, diced
  • 1 medium sweet potato, peeled and cubed
  • 2 cups spinach
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Optional: avocado, sesame seeds for topping

Instructions

  1. Cook brown rice according to package instructions.
  2. Heat olive oil in a pan over medium heat. Add diced chicken, seasoning with garlic powder, salt, and pepper. Cook until chicken is browned and cooked through, about 6–7 minutes.
  3. Add cubed sweet potatoes and a splash of water to the pan. Cover and cook until sweet potatoes are tender, about 10–15 minutes.
  4. Stir in spinach and cook until wilted.
  5. Serve the chicken and sweet potato mixture over brown rice. Top with avocado and sesame seeds if desired.

Notes

For extra flavor, consider adding chili flakes or fresh herbs like cilantro or parsley before serving.
