Chicken and Spinach Casserole with Cream Cheese

A comforting and creamy chicken and spinach casserole, perfect for family gatherings or a busy weeknight dinner.

  • 2 cups cooked chicken breast, shredded or diced
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 4 cups fresh spinach, chopped
  • 8 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup shredded mozzarella cheese, plus 1/2 cup for topping
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp dried Italian seasoning
  • 1/2 tsp paprika
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a medium-sized casserole dish with olive oil or cooking spray.
  2. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the chopped onion and cook until softened, about 3-4 minutes. Add minced garlic and cook for another minute until fragrant.
  3. Stir in the chopped spinach and cook until wilted, about 2 minutes. Remove from heat and set aside.
  4. In a large mixing bowl, combine cream cheese, sour cream, 1/2 cup mozzarella, Parmesan, Italian seasoning, paprika, salt, and pepper. Mix until creamy.
  5. Fold in the shredded chicken and sautéed spinach mixture until evenly coated.
  6. Transfer the mixture to the prepared casserole dish and spread evenly.
  7. Sprinkle the remaining 1/2 cup shredded mozzarella cheese on top.
  8. Bake for 20-25 minutes, or until bubbly and golden on top.
  9. Remove from oven and garnish with fresh parsley. Allow to cool slightly before serving.

Notes

For added flavor, consider using rotisserie chicken or topping with red pepper flakes.
