2 cups cooked chicken breast, shredded or diced
1 tbsp olive oil
1 small onion, finely chopped
3 cloves garlic, minced
4 cups fresh spinach, chopped
8 oz cream cheese, softened
1/2 cup sour cream
1/2 cup shredded mozzarella cheese, plus 1/2 cup for topping
1/4 cup grated Parmesan cheese
1/2 tsp dried Italian seasoning
1/2 tsp paprika
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Instructions
Preheat your oven to 375°F (190°C). Grease a medium-sized casserole dish with olive oil or cooking spray.
Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the chopped onion and cook until softened, about 3-4 minutes. Add minced garlic and cook for another minute until fragrant.
Stir in the chopped spinach and cook until wilted, about 2 minutes. Remove from heat and set aside.
In a large mixing bowl, combine cream cheese, sour cream, 1/2 cup mozzarella, Parmesan, Italian seasoning, paprika, salt, and pepper. Mix until creamy.
