A comforting and flavorful chicken and rice soup, perfect for chilly days, made with tender chicken, wholesome rice, and fresh vegetables.

Ingredients

  • 1 cup cooked chicken, shredded
  • 1 cup rice
  • 4 cups chicken broth
  • 1 onion, diced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the onion, carrots, and celery; sauté until the vegetables are tender.
  3. Stir in the garlic and thyme, cooking for an additional minute.
  4. Pour in the chicken broth and bring to a boil.
  5. Add the rice and shredded chicken; reduce heat and simmer for about 15 minutes, or until the rice is cooked.
  6. Season with salt and pepper to taste.
  7. Serve hot.

Notes

For a creamier version, add a splash of milk or cream just before serving. Adding lemon juice can brighten the flavor.
