A comforting and easy chicken rice casserole, perfect for weeknights. Creamy, cheesy, and filled with hearty ingredients.

Ingredients

  • 2 cups cooked rice
  • 2 cups cooked chicken, shredded
  • 1 cup cream of chicken soup
  • 1 cup chicken broth
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 cup frozen mixed vegetables
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the cooked rice, shredded chicken, cream of chicken soup, chicken broth, shredded cheese, mixed vegetables, garlic powder, onion powder, salt, and pepper.
  3. Mix until well combined.
  4. Transfer the mixture into a greased casserole dish.
  5. Cover the dish with aluminum foil and bake for 25-30 minutes.
  6. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
  7. Let it cool for a few minutes before serving.

Notes

Customize the vegetables and cheese based on your preference. Add a splash more chicken broth for extra creaminess if needed.
