A warm, hearty chicken rice casserole filled with basmati rice, tender chicken, and vibrant carrots, perfect for family dinners.

  • 2 cups basmati rice
  • 1 pound chicken, diced
  • 1 onion, chopped
  • 2 carrots, diced
  • 4 cups chicken broth
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large dish, combine the basmati rice, diced chicken, chopped onion, and diced carrots. Sprinkle in the garlic powder, salt, and pepper.
  3. Pour the chicken broth over the mixture and stir to combine.
  4. Cover the dish with foil and place it in the preheated oven. Bake for 45 minutes.
  5. If using cheese, remove the foil after 45 minutes, sprinkle shredded cheese on top, and return to the oven for an additional 10-15 minutes.
  6. Let the casserole cool for a few minutes before serving.

Notes

For a creamier texture, mix in sour cream or a splash of cream before baking. Feel free to add vegetables like broccoli or peas for extra nutrition.
