  • 1 can black beans, rinsed and drained
  • 1 can fire-roasted tomatoes
  • 1 poblano pepper, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Sauté the onion, garlic, and poblano pepper over medium heat until softened.
  2. Add the shredded chicken, black beans, fire-roasted tomatoes, chicken broth, cumin, chili powder, salt, and pepper.
  3. Bring the mixture to a boil, then reduce the heat and let it simmer for 15-20 minutes.
  4. Stir in the heavy cream and adjust seasoning if necessary.
  5. Serve hot, garnished with fresh cilantro.
