A quick and satisfying Chicken & Mozzarella Bake featuring tender chicken, fresh herbs, and gooey mozzarella – perfect for family dinners.

Ingredients

  • 4 boneless skinless chicken breasts
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • Salt and black pepper to taste
  • 16 oz can chopped tomatoes
  • 3 cloves garlic, minced
  • ½ red onion, chopped
  • 1 tsp oregano
  • 1 cup shredded mozzarella
  • 23 fresh basil leaves, for garnish
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 375°F.
  2. Pat the chicken dry and score it lightly.
  3. Season the chicken with salt, black pepper, garlic powder, onion powder, and Italian seasoning. Drizzle with olive oil.
  4. In a mixing bowl, combine the chopped tomatoes, minced garlic, chopped red onion, oregano, salt, and pepper.
  5. Place the seasoned chicken in a baking dish and pour the tomato mixture over it.
  6. Sprinkle the mozzarella on top.
  7. Bake for 25-30 minutes, or until the chicken is cooked through.
  8. For a crispy top, broil for 2-3 minutes.
  9. Garnish with torn basil leaves before serving.

Notes

Let the chicken rest for a few minutes after baking to retain juices. Feel free to experiment with other cheeses and add more vegetables for variety.
