Delightful Chicken Gyros with marinated grilled chicken, fresh veggies, and homemade tzatziki sauce.

  • 2 pounds boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 teaspoons smoked paprika
  • 2 teaspoons ground cumin
  • 2 cloves garlic, minced
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground coriander
  • 1 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon crushed red pepper flakes
  • 1 cup plain Greek yogurt (for tzatziki)
  • 2 cloves garlic, minced (for tzatziki)
  • 1/2 teaspoon dried dill weed (for tzatziki)
  • 2 teaspoons lemon juice (for tzatziki)
  • 1-inch piece of an English cucumber, peeled and finely diced (for tzatziki)
  • 6 pitas (or flatbreads) for serving
  • 1 small romaine heart, chopped for serving
  • 1 cup cherry tomatoes, halved for serving
  • 1/2 of a red onion, thinly sliced for serving
  • 1/2 of an English cucumber, thinly sliced for serving
  • Crumbled feta cheese (optional)

Instructions

  1. Make the tzatziki: In a bowl, combine Greek yogurt, minced garlic, dried dill, and lemon juice. Stir in diced cucumber, seasoning with salt and pepper to taste. Refrigerate to allow the flavors to meld.
  2. Prepare the chicken marinade: In a large bowl or ziplock bag, combine olive oil, lemon juice, smoked paprika, ground cumin, minced garlic, ground turmeric, ground coriander, kosher salt, black pepper, onion powder, ground cinnamon, and crushed red pepper flakes. Add chicken and coat it well with the marinade. Let it marinate for 1 to 4 hours.
  3. Grill the chicken: Preheat your grill to medium heat and oil the grates. Remove the chicken from the marinade, allowing any excess to drip off. Grill the chicken for a few minutes on each side, flipping once until cooked thoroughly. Remove the chicken from the grill and let it rest before chopping into bite-sized pieces.
  4. Assemble the gyros: Lightly toast or warm your pitas. Layer the pita with chopped chicken, lettuce, cherry tomatoes, red onion, cucumber, and a generous scoop of tzatziki. If desired, sprinkle crumbled feta cheese on top.

Notes

For best results, allow chicken to marinate for at least an hour. Use fresh ingredients for enhanced flavor.
