  • 2 cups fresh spinach

  • 1/2 cup grated Parmesan cheese

  • Fresh parsley for garnish

Instructions

  1. In a large skillet, heat olive oil over medium-high heat. Season chicken breasts with salt and pepper, then sear until golden and cooked through, about 5-7 minutes per side. Remove chicken and set aside.
  2. In the same skillet, add chicken broth and bring to a simmer. Stir in heavy cream and Parmesan cheese, mixing until smooth.
  3. Add fresh spinach and cook until wilted.
  4. Return the chicken to the skillet, add lemon juice, and let everything simmer together for a few minutes.
  5. Serve the Chicken Florentine over pasta or rice and garnish with fresh parsley.
