A flavorful Chicken Fajita Casserole that blends the vibrant tastes of traditional fajitas into a comforting dish, perfect for weeknight dinners.

  • 1.5 lbs chicken breast, sliced
  • 3 bell peppers (red, yellow, green), sliced
  • 1 large onion, sliced
  • 4 oz cream cheese, softened
  • 1/2 cup sour cream
  • 2 cups shredded cheddar cheese
  • 2 tbsp olive oil
  • 1 packet taco seasoning
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F and grease a baking dish.
  2. Slice the chicken breast, bell peppers, and onion into thin strips.
  3. Heat olive oil in a skillet over medium heat, and cook the sliced chicken until lightly browned.
  4. Add the sliced bell peppers and onion to the skillet and cook for 5 minutes until softened.
  5. Stir in the taco seasoning and lime juice, mixing well.
  6. In a separate bowl, mix cream cheese and sour cream until smooth.
  7. Transfer the chicken and vegetable mixture to the greased baking dish and spread the cream cheese mixture on top.
  8. Sprinkle shredded cheddar cheese over the casserole.
  9. Bake for 20–25 minutes until golden and bubbly.
  10. Remove from oven, garnish, and serve hot.

Notes
