A comforting chicken and spinach casserole enveloped in cream cheese and mozzarella, perfect for family dinners or special occasions.

  • 2 large boneless, skinless chicken breasts
  • 2 tablespoons olive oil, divided
  • 3 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • 1/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups fresh spinach
  • 8 ounces cream cheese, softened
  • 1 cup shredded mozzarella cheese, divided
  • 1/2 cup Parmesan cheese (optional)

Instructions

  1. Preheat your oven to 400°F (200°C) and grease a 9×13-inch baking dish.
  2. Whisk together 1 tablespoon olive oil, minced garlic, Italian seasoning, salt, and black pepper in a bowl.
  3. Toss chicken cutlets in the marinade and refrigerate for 15–30 minutes.
  4. Heat remaining olive oil in a skillet over medium heat, add spinach, and cook for 2–3 minutes until wilted.
  5. In a bowl, beat the cream cheese and stir in cooked spinach and 1/2 cup mozzarella cheese.
  6. Optionally, sear marinated chicken in the skillet for 1–2 minutes on each side.
  7. Arrange chicken in the greased baking dish, cover with the cream cheese and spinach mixture, and sprinkle the remaining mozzarella on top.
  8. Bake for 20–30 minutes or until chicken reaches 165°F (75°C) and cheese is melted and lightly browned.
  9. Let rest for 5 minutes before serving.

Ensure your cream cheese is softened for easy mixing. Use an instant-read thermometer to check chicken doneness.
